Blue corn meal, or Harinilla, was often used by Native Americans to bake tortillas and other starches. Blue corn meal was a staple of the Native American foods, along with corn, beans, squash, and various indigenous meats, particularly deer and buffalo meat. Native Americans also used blue corn meal as a medicine. In particular, the Navajo believed in its healing capabilities. Blue corn meal is a ground grain, sweet, and is often mixed with herbs to complement the taste. Grainier than yellow corn, blue corn meal is used today just as it was used in the past. Its distinct color is seen most commonly in tortillas and tortilla chips.
